What are the basics of safe batch cooking and freezing?
Batch cooking — making a big quantity and freezing portions for later — saves time and money and is a brilliant standby for busy nights. A few food-safety basics matter: cool cooked food quickly (within a couple of hours) before freezing rather than putting it in hot; freeze it in meal-sized portions in sealed containers; and label everything with the contents and date so you use it in good time. To eat, defrost thoroughly (ideally overnight in the fridge) and reheat until piping hot all the way through. As a rule, don't refreeze food that has already been frozen and thawed. Dishes like stews, curries, soups, chillis and bolognese freeze especially well. Always follow current UK food-safety guidance for specific foods.
