The turkey — the only thing that really matters
Allow 1-1.5lbs of turkey per person. A 14lb turkey feeds 10 comfortably with leftovers. The most common mistake is undercooking — use a meat thermometer (165°F / 74°C in the thickest part of the thigh). Brine the turkey the night before for juicier meat. Rest it for 30-45 minutes before carving.
The sides that actually matter
Stuffing (inside or outside the bird), mashed potato, green beans, sweet potato casserole, cranberry sauce, and gravy made from the turkey drippings. Everything else is optional. Make as much ahead as possible — the day itself should be assembly and reheating, not cooking from scratch.
