What is a simnel cake and why does it have 11 marzipan balls?
Simnel cake is a traditional Easter fruit cake with a layer of marzipan baked through the centre and 11 marzipan balls decorating the top. The 11 balls represent the 11 faithful apostles (Judas is excluded). It was traditionally made by domestic servants to give to their mothers on Mothering Sunday, which is why it is also associated with Mothering Sunday (the fourth Sunday of Lent).
